Vegetable Korma

One of my favorite Indian dishes. Very easy to make. Tasty, healthy eating and you just can't go wrong.

Per Eskimo.com, Vegetable Korma is described as "Vegetables cooked in rich almond cream paste and herbs."

Recipe courtesy of Manjulas Kitchen...you can buy Korma sauce in a jar, but it just ain't the same. Don't cheat yourself. Treat yourself to homecooked Korma. Add chicken or seafood, but it tastes so good, you don't need meat.

Vegetable (Navratan) Korma
This recipe is serving for 4
1 cup chopped cauliflower
1/2 cup green peas
1/4 cup sliced carrot
1/2 cup chopped green beans (about ½" long)
1/2 cup chopped red bell pepper
1/3 lb cubed fried paneer (Indian cheese)
2 tablespoon finely chopped cilantro
1 seeded finely chopped green chilly
1 tablespoon shredded ginger
1/2 cup seeded and chopped tomatoes for garnishing
3 tablespoon oil
pinch of hing
1/2 teaspoon cumin seed
1 tablespoon of coriander powder
1/4teaspoon turmeric
1/2 teaspoon red chilly powder
2 bay leaves
1/2 teaspoon garam masala
1/2 teaspoon amchoor powder
1 cup milk
1/2tablespoon cornstarch

Ummmmmm, very spicy. I'll give it a try. But I'll leave out the cauliflower.
